Ingredients
1 cup of rice flour
1 tsp baking powder
¼ tsp salt
1 cup condensed milk
½ cup of ghee
1 cup of grated desiccated coconut
½ cup of ground molasses
3 eggs
½ tsp vanilla essence
¼ tsp cardamom powder
Instructions
Prep baking mould.
Preheat oven to 180 degrees Celsius.
Sift together rice flour, baking powder and salt
In a separate beat the eggs till light and frothy
Add the following to the beaten eggs in order
Molasses
Condensed milk
Vanilla essence
Cardamom powder
Ghee
Beat all in till well blended
Stir in coconut and then the rice flour mix
Pour into prepped baking mould and bake for 20-25 minutes.
Test for doneness with skewer.
Leave in mould for 10 minutes before turning out.
