(BBN) – This is our all-time comfort food: fried chicken wings! We use simple ingredients plus corn chips! Double-frying is also the secret of having crunchy chicken.
12 pieces chicken wings and lollipop
1 piece beaten egg
2 teaspoon all-purpose flour
5 pieces lemon or kalamansi juice
1 tablespoon salt
2 cups corn chips, crushed and finely chopped
1 cup cooking oil
Clean and cut chicken wings into two to make 6 lollipops and 6 wings.
Marinate with calamansi and salt for an hour.
Heat the oil in a small frying pan while preparing a battter by combining beaten egg and flour.
Dip the chicken lollipops and wings one by one into the batter.
Then dip in the crushed corn chips as bread crumbs.
Fry by batches for 6-10 minutes or until golden brown. Then fry again all together.
By doing this double fry makes the chicken crunchy and juicy even overnight.
Use steel strainer or colander to remove excess oil. Remember to not use paper towels as this will make the chicken soggy.
Serve over prepared fresh lettuce. Use preferred dips and sauces but you can still enjoy eating it without sauces, according to yummy.ph.
