Ukrainian salty pancakes that I loved when I was a child (and I still love them!) make a great breakfast.
I know potato pancakes are cooked in different countries, but Ukrainian potato pancakes seem to taste better.
Serve your potato pancakes with a dollop of sour cream and dill to make them more delicious, according to Amerikanki.
INGREDIENTS:
5 large potatoes
1 egg
1 onion
1 tablespoon sour cream, optional
3 tablespoons all purpose flour
1 teaspoon salt
black pepper to taste
olive oil
DIRECTIONS:
Peel onion and potatoes. Grate them and pour off extra liquid.
Add egg, flour, and sour cream, salt and black pepper, stirring until the batter is thick.
You can also blend all ingredients in blender (for about 5 seconds) to make the batter faster.
Preheat a large pan or griddle to medium heat. Add a little bit of oil to the pan, and cook small potato pancakes until golden brown on all sides.
